Kneeling and with her hands in soil, Maria begins her presentation by showing that the roots of Olei’s work are intrinsically linked to the people and history of Galicia.
After the Catholic Monarchs ordered the cutting down of the Galician olive trees, only the trees in the most remote and inaccessible areas survived. In order to find them once again, a vast amount of historical research and many conversations in villages took place.
Once they were found, the great discovery which meant the identification of a Galician olive with its own identity, “Brava” was made. With this differentiating feature, Maria tells us how Olei is not only about producing oil, but it also aspires to recover a sector which has been forgotten with time.
Maria’s great capacity to inform brings us closer to history and shows us a proposal for the future of Galician olive growing at the first Harvest Market Roundtables.
