Sustainable gastronomy was the protagonist of the latest Co-Cooking workshop, where 25 catering students were able to discover the Fogar do Santiso catering project that has known how to adapt to circular economy, sustainability and creating zero waste.
25 students from the Kitchen Management, and Cooking and Gastronomy courses from the CIFP Manuel Antonio in Vigo took part in a workshop this morning, as part of the Co-Cooking programme, in collaboration with Fogar do Santiso.
During the activity, held at the facilities of Fogar do Santiso in Teo, the students were able to discover ecological culture through circular economy, actively taking part in each of the stages involved in the gastronomy cycle that the raw materials go through from the garden to the plate.
To carry out this activity, we had the collaboration of the family based project Fogar do Santiso, a catering model that defines itself as 100% Galician, 100% ecological and 100% sustainable, and based on self-sufficiency, as an ecological producer, to obtain the raw materials. The professionals involved in the project were in charge of transmitting their knowledge, enriched by two decades of experimenting with ecological culture, to the future caterers.
Within this programme, the students have learnt how to make “filloas” in a traditional way, they have collected vegetables in the fields of Fogar do Santiso, used traditional tools like mills, and have made traditional “empanadas”, among other activities. The day on which the future caterers were immersed in tradition and sustainability, finished with a tasting of ecological food.
The support to spreading Galician culture, boosting local and responsible consumption, defending the environment and reviving of ecological and traditional production as the pillar for building a better future for our region, is the philosophy that is behind the Fogar do Santiso project, and that this workshop in particular has tried to transmit. This philosophy is firmly shared by Hijos de Rivera, and one that we try to spread and defend every time we have the chance to do so.
